I have to admit - I "borrowed" this recipe from Greg Walker on Grill-Share.com - but he borrowed it too, so I guess it's OK to pass on. If you have no way to keep ice cream, I suppose you could substitute Cool Whip - or just eat the bananas as is!

Upside-down Banana Splits
Ingredients
Method
1) Place a square of aluminum foil on your work space for each banana – these will have to loosely wrap the bananas, so make them a little generous.
2) Place a banana, still in its skin, curved side down on the foil square, and using a sharp knife, slit the banana through the skin and the flesh, but leave the lower skin intact. Open the bananas slightly, in the manner of a baked potato, crushing the bottom slightly so they sit upright.
3) Drizzle each banana with about an ounce of dark rum.
4) Put fudge sauce in the banana, pressing it into the slit.
5) Loosely wrap bananas in the foil and place over indirect heat keeping the slit position at the top. Timing will depend on how dead the coals are when you put them in, but we find that about 40 minutes works well in a covered Weber. You want the bananas to cook and the fudge sauce to be hot.
6) Open the packets carefully avoiding the hot steam, and transfer bananas to serving dishes. Serve with a big scoop of ice cream and a sprinkling of nuts.
