I would love to have a good campfire do Chili recipe. I'd rather stay away from a prepackaged seasoning mix because they put in so much salt it ruins it for me. Can I get the same good chili flavor without all the salt? Does anyone have any tricks or tips for this?

I went to look up DO Chili recipes and boy, did I get some! I found a site with no less than 168 chili recipes, including a $20,000 award-winning one! It's at http://www.justdutchovenrecipes.com/inxdch.html.
When I Googled "best chili for DO" I got another list -- http://www.cooks.com/rec/search/0,1-0,best_chili,FF.html.
I was just going to pick one that sounded great and give that to you, but wow, I had no idea that there were so many! Your best bet is just to pick one that suits your tastes and then adjust the salt. That would be the way to go.
In this day and age, I can't imagine that there are no low-salt chili seasonings.
I did also find a recipe for DO chili seasoning (you control the salt) at http://www.easy-homemade-recipes.com/chili-seasoning.html.

Sandra you are the researcher's dream. I'm going for your last tip on the seasoning first. There is a chili flavor that I want to capture and its not from the beans, beef, tomatoes or chilies. I like Cook's recipes in general so I'll try that next. I'll let you know if I find an award winner.
