I recently tried this one while camping at Ft. Worden State Park in Port Townsend, WA. It was a hit! We were camping with friends who are lactose intolerant so the recipe reflects those substitutions.

1 pound slided peaches (We used canned, but frozen or fresh will work too.)
1 pound blueberries (We used fresh, but frozen will work.)
1 t vanilla extract
3/4 c sugar (divided)
1 1/2 T cornstarch
1/4 t ground cinnamon
1/8 t nutmeg
1 c flour
3/4 t baking powder
1/4 t baking soda
1/4 c vegan butter cut into small pieces
1/2 c buttermilk (We substituted rice milk made into buttermilk by combining 1/2 T white vinegar to 1/2 c rice milk.)
1 lrg egg beaten
1 T turbinado sugar

I prepared all of the dry ingredients at home in quart-sized zip locks so that it would be easy to mix at the camp site. I also measured and placed the butter and vanilla in seperate small containers and placed all into a gallon-sized bag so that all the fixings were together. On the outside of the bag I wrote in permanent marker the instructions for what I needed to do.

Combine the fruit, vanilla, and 1/2 c sugar, corn starch, cinnamon and nutmeg together directly into a greased dutch oven. In a seperate bowl cut the butter into the flour mixture (flour, baking powder, baking soda, remainder of sugar) until course. Whisk together the buttermilk and egg, and add to the flour mixture.

Drop dough by spoonfuls over fruit to form dumplings. Sprinkle with turbinado sugar.

Put the lid on the dutch oven and place it in the glowing embers of the campfire by banking the sides about half-way up the pan, and placing a few embers on top. Bake for about 30-45 minutes rotating the pan every 15 minutes to ensure even cooking. Check after 30 minutes for doneness: bubbling fruit mixture and dumplings that aren't doughy. Enjoy!

This sounds really good and the Colorado peaches are in so I might have to get some and make this. I like the way you premeasured everything before you left home. Good organizational skills. What temp is this supposed to be backed at?

This sounds sooooo good! I love blueberries! I found some that are wild frozen and they taste like it -- delicious. The bluberries themselves are smaller, but they make up for it in flavor times ten.
are they teh Wylers Wild Maine Blueberries,
I get them all the time. they are great,

Not Wyman's I don't think, but I don't remember the name. I live in California, so the brand names may be different from back East.
Ah yes.. I do keep forgetting that fact. Either way I love my wild blueberries In my pancakes, on my ice cream. any where i can put them i love them.
