@Kathy, thank you for the tips on the oven. We stopped by Walmart tonight and picked up a box of liners. I also re-seasoned it tonight after cleaning it. Looking forward to cooking up something again real soon. Thank you again!

If it was a challenge to clean the dutch oven, it might not be seasoned good enough. Try seasoning it again. All you should really have to do is wipe it out if it is seasoned right. But then, it is always easier with a liner. Wal-mart has parchment liners that we get. They are less expensive then the aluminum liners and don't take up the space.

We used our Dutch oven for the first time this weekend. WoW! We started by heating up baked potatoes and then used the pre-heated oven to do a peach dump cake. We are now hooked. The only thing we forgot was to use a liner so clean-up is a bit of a challenge.

It is..I have it requested for holiday meals too now..and everyone is amazed its all done in cast iron dutch ovens outside over coals...on that camping trip I cooked for 20 people...UGH! I LOVE youtube for finding good recipes to try or for things I can alter and do my own twist on...

Lets see, last spring on my big group camp out I made my signature cranberry-apple roast pork loin with wild rice, bacon-cheese potatoes, a green bean casserole and finished it off with an apple cobbler with an oatmeal/crumb topping..just because we sleep in tents doesn't mean we can't eat well..only now the group expects more...LOL

I have made pineapple upside down cake in a dutch oven and it does turn out really good. I know it wasn't hard. I'll try and find mine.

@Chris - what recipe doesn't seem faux?

I went on an overnight whitewater trip in the wilderness once, and the guides cooked for us at night.  We had a pineapple upside down cake for dessert one night and boy was it delicious!

Anyone have a tried and true recipe for pineapple upside down cake?
