We are going on our semi-annual homeschool camping trip in May On the last night there we have a potluck and I was looking for some new ideas for easy prep dishes. Any ideas?

A very easy and quick meal that I like when backpacking is a 4 oz packet of salmon mixed in with package of quick couscous. I like the curry flavor stuff but all you need is 1.25 cps of boiled water. I also get dried mushrooms and garlic with just a little more "gourmet" to the meal. Don't know if you can apply this to your scenario but it is very flavorful.

before the trip, throw some sliced potatoes with some parsley ( or your favorite herb) into an aluminum foil wrap with some butter spray over it so when you set up your campfire you can just set them into some hot coals. real easy side!
I've been doing this since I was a teenager. We had a toaster oven, and I would make this as a quick side, or for a midnight snack. I pretty basically got my whole family doing it. Since it was so easy, we also used it when we went camping. My husband and I have also discovered a great way to make 'omlets' that the kids get a kick out of. You break one or two eggs into a baggie, then add ham or onions or mushrooms, or whatever tickles your fancy. Then you put the baggie into a pot of boiling water and let it cook. When it's done, you just turn the baggie inside out onto your plate, and season to your liking!

I have seen the eggs in a bag. Never thought about turning it into an omlete. Alot easier than cleaning a pan.
Last night meal....Hobo stew. Anything left over meats goes into the pot. Add your favorite can of vegetables, some can potatoes, a can of tomatoes.... everyone loves this and you can get pretty creative.
This is for Frito and corn salad. It's cold and no cooking. Just stir in bowl:
2 cans Mexicorn, 1/2 C. each onions and bell pepper, 1/2 C mayonaise. At the last minute add 1/2 bag of 9 3/4 oz size Fritos crushed in bag. It's good and easy. It's even better when it sets for a little while.
